  • 6 cups crispy rice or corn cereal
  • 2 cups pecan halves
  • 1/2 cup unsalted butter
  • 1 cup brown sugar (packed)
  • 1/4 cup light corn syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Instructions

  1. Preheat the oven to 250°F (120°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the cereal and pecans.
  3. In a saucepan over medium heat, melt the butter, then stir in brown sugar and corn syrup. Bring to a boil while stirring constantly for about 3-4 minutes.
  4. Remove from heat and stir in vanilla extract and baking soda.
  5. Pour the caramel glaze over the cereal mixture and stir until evenly coated.
  6. Spread the mixture on the prepared baking sheet and bake for one hour, stirring every 15 minutes.
  7. Allow to cool completely before breaking into pieces and storing in an airtight container.
