  • 1 sheet Puff Pastry (320g/11.3oz)
  • 150g/5oz Sharp Cheddar Cheese (grated)
  • 1 large White Potato (300g/10.5oz, diced)
  • 1 large Onion (150g/5oz, grated)
  • 1/4 cup Heavy Cream (60ml)
  • 1 tbsp Butter
  • 1 tsp Dijon Mustard
  • Salt & Pepper to taste
  • 1 Egg (beaten for wash)

Instructions

  1. In a large pan over medium heat, fry diced potatoes in oil or butter until crisp outside and soft inside (about 15-20 minutes). Season with salt and pepper. Add grated onion and sauté for another minute. Let cool.
  2. Combine the cooled potato mixture with grated cheese, mustard, cream, salt, and pepper in a bowl.
  3. Roll out the puff pastry and cut into four rectangles. Place filling on one side of each rectangle, brush edges with egg wash, fold over, seal tightly with fingers or a fork.
  4. Brush tops with egg wash and bake on a parchment-lined tray at 200°C/390°F for 15-20 minutes until golden brown.
