  • 1 bell pepper, diced
  • 1 cup snap peas or snow peas
  • 1 onion, diced

  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 2 tbsp olive oil
  • 2 tbsp honey (optional)
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a pot, combine rinsed rice with 4 cups of water. Bring to a boil, then reduce heat and simmer covered for about 15-20 minutes until fluffy.
  3. Meanwhile, heat olive oil in a large skillet over medium-high heat. Sauté diced onion and minced garlic until translucent (about 2-3 minutes).
