  • 1 cup fresh basil pesto (store-bought or homemade)
  • 4 pieces of flatbread (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet over medium-high heat, add olive oil and cook the chicken for 6-7 minutes per side until cooked through (165°F or 75°C). Let rest before slicing.
  4. Lay flatbreads on a baking sheet and spread each with basil pesto.
  5. Top each flatbread with sliced chicken, mozzarella cheese, halved cherry tomatoes, and Parmesan cheese.
  6. Bake for 10-12 minutes until bubbly and golden brown. For an extra crispy top, broil for the last minute.
