  • 3 tbsp butter
  • 1/4 cup chopped cilantro leaves
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1/2 cup mayonnaise
  • Juice from 1 lime
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta in boiling water until al dente (8-10 minutes), then drain and cool.
  2. In a skillet, melt butter over medium heat and sauté corn (and jalapeño if using) until golden.
  3. In a large bowl, combine cooled pasta, sautéed corn, cilantro, lime juice, mayonnaise, chili powder, smoked paprika, salt, and pepper. Stir until well mixed.
  4. Chill in the fridge for at least 30 minutes before serving for best flavor.
