  • 2 tablespoons unsalted butter
  • 8 ounces semisweet or bittersweet chocolate, chopped
  • ¼ teaspoon peppermint extract
  • 3 candy canes, crushed
  • finely crushed candy canes for topping
  • red sanding sugar for topping
  • cocoa powder for topping

Instructions

  1. In a medium saucepan over low-medium heat, bring the heavy cream and butter to a gentle boil.
  2. Pour the hot cream mixture over the chopped chocolate in a bowl and let it sit for 5 minutes. Stir until smooth and add peppermint extract and crushed candy canes.
  3. Refrigerate until firm, about 1-2 hours.
  4. Once firm, scoop out portions using a tablespoon and roll into balls.
  5. Roll each truffle in your choice of toppings.
  6. Chill again until set, about one hour.
