  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • 2 tablespoons maple syrup

  • 2 ½ cups chopped pecans
  • 6 oz semi-sweet chocolate
  • 1 tablespoon vegetable oil

Instructions

  1. Line a tray with parchment paper to prevent sticking.
  2. In a food processor, pulse graham crackers into fine crumbs.
  3. In a large bowl, mix melted butter, brown sugar, vanilla extract, heavy cream, maple syrup, and salt until well combined.
  4. Stir in graham cracker crumbs and chopped pecans until evenly mixed.
  5. Scoop the mixture into small balls and place them on the prepared tray.
  6. Freeze for at least 45 minutes to firm up.
  7. Melt semi-sweet chocolate with vegetable oil in a microwave-safe bowl until smooth.
  8. Coat each truffle in melted chocolate and sprinkle additional chopped pecans on top before cooling.
  9. Refrigerate for one hour or until set before serving.
