  • 2 lbs red potatoes (washed)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 400°F. Place butter in a 9×13 baking pan and let it melt as the oven heats.
  2. Wash and halve the red potatoes, scoring each piece for enhanced flavor absorption.
  3. In a bowl, mix Parmesan cheese with 2 tablespoons of herb seasoning, salt, and pepper.
  4. Once the butter is melted, sprinkle half of the seasoning mixture in the pan and lay the potatoes cut-side down on top.
  5. Spray tops of potatoes with nonstick cooking spray and add remaining seasoning mix.
  6. Bake uncovered for about 40 minutes or until tender and golden brown.
