  • 1 lb ground beef (or ground chicken)
  • Coconut oil
  • Yellow onion
  • Garlic
  • Fresh ginger
  • Carrots
  • Green cabbage
  • 6 cups chicken broth
  • Coconut aminos
  • Rice vinegar (or lime juice)
  • Green onions

Instructions

  1. In a large pot, brown the ground beef over medium heat, seasoning with salt and pepper. Set aside.
  2. In the same pot, melt coconut oil and sauté diced onion, minced garlic, and grated ginger until softened (about 4 minutes).
  3. Add shredded carrots and cook until they begin to soften. Stir in sliced cabbage for another couple of minutes.
  4. Pour in chicken broth, add cooked meat and coconut aminos. Bring to a boil, then reduce to a simmer for 20-25 minutes until cabbage is wilted.
  5. Stir in rice vinegar or lime juice before serving hot, topped with chopped green onions.
