  • 1/2 tsp baking soda (monster cookie layer)
  • 1/8 tsp baking powder (monster cookie layer)
  • 1/4 tsp salt (monster cookie layer)
  • 1/4 cup unsalted butter (room temperature, monster cookie layer)
  • 1/3 cup brown sugar (packed light or dark, monster cookie layer)
  • 1/8 cup white granulated sugar (monster cookie layer)
  • 1/4 cup peanut butter (creamy, monster cookie layer)
  • 1 tsp pure vanilla extract (monster cookie layer)
  • 1 large egg (room temperature, monster cookie layer)
  • 1/2 cup quick oats (monster cookie layer)
  • 1/2 cup mini chocolate chips (monster cookie layer)
  • 1/2 cup mini M&Ms (monster cookie layer)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix sugar, eggs, melted butter, oil, and vanilla until smooth. Fold in flour, cocoa powder, cornstarch, salt, and chocolate chips until combined.
  3. In another bowl, cream butter and sugars together until fluffy. Mix in peanut butter and egg. Combine dry ingredients (flour, cornstarch, baking soda, baking powder, salt) with oats and chocolates; fold into wet mixture.
  4. Spread half of the brownie batter in the dish. Layer with monster cookie mixture and top with remaining brownie batter.
  5. Bake for about 40 minutes until set. Allow cooling before cutting into bars.
