  • 1/3 cup white sugar
  • 1 cup dried fruit blend (or your choice)
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk (or plain yogurt)
  • 3/8 cup melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, holiday spice mix, and sugar until well combined.
  3. In another bowl, beat the egg and mix with buttermilk and melted butter.
  4. Gently fold the wet mixture into the dry ingredients until just combined; avoid overmixing.
  5. Fold in dried fruits and candied mixed peel.
  6. Spoon the batter into greased muffin tins, filling each about two-thirds full.
  7. Bake for about 20 minutes or until golden brown; a toothpick should come out clean.
  8. Let cool slightly before dusting with non-melting sugar or powdered sugar.
