  • 1 lb lean ground beef
  • 1 Persian cucumber, thinly sliced
  • 6 oz cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup red wine vinegar
  • 2 tbsp chopped dill
  • 1 tsp sugar
  • 1 tsp salt
  • Freshly ground black pepper
  • 1 cup Greek yogurt (or coconut yogurt)
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 small bunch mint
  • 2 tsp honey
  • 1/2 tsp salt
  • 1/4 cup red onion, finely chopped
  • 1/2 cup panko bread crumbs
  • 2 tbsp fresh oregano (sub 1 tbsp dried)
  • 2 tsp thyme, fresh or dried
  • 1 tbsp lemon zest
  • 68 kalamata olives, pitted and finely chopped
  • 1/2 tsp salt
  • (Optional) 1-2 tbsp flour
  • Oil for pan frying
  • 46 pita pockets, warmed
  • Arugula or micro greens for serving

Instructions

  1. 1. Prepare the salad by mixing sliced cucumber, halved cherry tomatoes, red onion, vinegar, dill, sugar, salt, and pepper in a large bowl. Refrigerate.
  2. 2. Make the mint yogurt sauce by blending Greek yogurt, olive oil, lemon juice, mint leaves, honey, and salt until smooth.
  3. 3. In a bowl, combine ground beef with chopped onion, panko breadcrumbs, herbs, lemon zest, olives, and salt. Form into meatballs.
  4. 4. Cook meatballs in a heated skillet with oil for 8-10 minutes until crispy on the outside and cooked through.
  5. 5. Assemble each pita by filling it with arugula or microgreens, salad mix, meatballs, and drizzle with mint yogurt sauce before serving.
