  • 1 (15 ounce) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese (optional)
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper to taste

Instructions

  1. Drain and rinse the chickpeas, then add to a large bowl.
  2. Chop the cucumbers, red onion, red bell pepper, and halve the cherry tomatoes; add them to the bowl.
  3. Add fresh oregano, parsley, Kalamata olives, and feta cheese if using.
  4. In a separate bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  5. Pour the dressing over the salad and toss gently until well combined.
