Ingredients

Scale
  • 1 tablespoon garlic paste
  • ½ teaspoon dried oregano
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 skinless boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 small lemon (thinly sliced)
  • ¼ cup white grape juice
  • 1 cup chicken broth
  • 1 cup marinated olives

Instructions

  1. In a bowl, mix garlic paste, oregano, Italian seasoning, salt, and pepper. Add chicken thighs, ensuring they are well coated in the marinade. Let them sit for at least 20 minutes.
  2. Heat olive oil in a skillet over medium heat. Sear marinated chicken thighs for about 5-6 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté onions and minced garlic until softened (about 3 minutes). Add lemon slices and white grape juice to deglaze the pan, simmering for about 3 minutes.
  4. Add chicken broth back into the skillet along with seared chicken thighs. Bring to a boil then reduce heat; simmer for another 5 minutes.
  5. Stir in olives and simmer for an additional 10 minutes before removing from heat. Let rest for 5-7 minutes prior to serving.
