  • 3/4 cup mascarpone cheese
  • 1/4 cup lemon juice
  • 1 cup mixed berries
  • Powdered sugar for dusting
  • 1 egg
  • 2 tbsp milk
  • 2/3 cup powdered sugar
  • 1 tsp vanilla
  • 1 tbsp lemon zest
  • 3 tbsp lemon zest
  • 1/3 cup granulated sugar
  • 3 tbsp unsalted butter, room temperature
  • 2 large eggs
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 400°F (200°C). Roll out the puff pastry and cut into squares.
  2. Whisk together 1 egg and 2 tbsp milk; brush over pastry squares and sprinkle with coarse sugar.
  3. Bake for 20-30 minutes until golden brown.
  4. In a bowl, beat cold whipping cream with powdered sugar and vanilla until soft peaks form.
  5. Mix mascarpone cheese with lemon zest until smooth, then fold in the whipped cream.
  6. Slice cooled pastries open, fill with lemon curd and mascarpone mixture, then top with fresh berries.
