  • 2 tsp kosher salt (divided)
  • ½ tsp pepper (divided)
  • ½ tsp each garlic powder, onion powder, dried thyme
  • ¼ tsp each paprika, poultry seasoning
  • 2 sweet onions (thinly sliced)
  • 2 tbsp olive oil (divided)
  • 1 tbsp butter
  • ¼ cup maple syrup
  • 1 ½ tbsp grainy mustard
  • 2 garlic cloves (minced)
  • 1 tbsp balsamic vinegar
  • ½ cup beef broth

Instructions

  1. Trim the silver skin from the beef tenderloin using a sharp knife.
  2. Mix salt, pepper, garlic powder, onion powder, thyme, paprika, and poultry seasoning; rub onto both tenderloins and let sit for 45 minutes.
  3. In a skillet over medium heat, melt butter with olive oil; add sliced onions and cook slowly until caramelized (about 45 minutes).
  4. Preheat oven to 400°F (200°C). Whisk together maple syrup, mustard, minced garlic, balsamic vinegar, beef broth, remaining salt, and pepper.
  5. Sear tenderloins in a hot skillet with olive oil until browned on all sides; transfer to baking dish with caramelized onions.
  6. Deglaze searing skillet with beef broth; stir in sauce mixture and simmer before pouring over tenderloins.
  7. Roast for 15-20 minutes until internal temperature reaches 145°F (63°C). Let rest for 10-15 minutes before slicing.
