  • 1/2 teaspoon salt
  • For the Maple Cream Filling:
  • 1/4 cup unsalted butter (room temperature)
  • 1 cup powdered sugar
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 1/4 teaspoon salt

Instructions

  1. In a mixer, beat together room temperature unsalted butter and maple sugar until combined. Add powdered sugar and mix until light and fluffy.
  2. Stir in pure maple syrup and maple extract until fully incorporated.
  3. In another bowl, whisk together all-purpose flour, cornstarch, and salt before gradually combining with the wet mixture until a soft dough forms.
  4. Chill the dough wrapped in plastic wrap for 30 minutes.
  5. Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to 1/8" thick and cut into leaf shapes.
  6. Bake on parchment-lined sheets for 8-10 minutes or until edges are barely golden. Cool completely on wire racks.
  7. For the filling, beat together room temperature unsalted butter, powdered sugar, pure maple syrup, vanilla extract, maple extract, and salt until smooth.
  8. Assemble cookies by spreading filling between two cooled cookies.
