  • 1 teaspoon olive oil
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas (drained and rinsed)
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/8 cup fresh chopped dill
  • 1/8 cup fresh chopped parsley
  • Lemon dressing (to taste)

Instructions

  1. Rinse kale under cold water, dry it thoroughly, and chop into bite-sized pieces. In a large bowl, massage the kale with olive oil and a pinch of salt for 1-2 minutes. Let sit for about 10 minutes.
