  • 1 cup celery, diced
  • 2 large handfuls fresh baby spinach or kale
  • 1 tablespoon olive oil
  • 6 to 8 cups chicken or vegetable stock
  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1 cup (8 ounces) uncooked orzo pasta
  • 1 1/2 tablespoons Italian seasoning
  • 6 cloves garlic, minced or pressed
  • Fine sea salt and freshly cracked black pepper, to taste
  • 1/2 teaspoon crushed red pepper flakes

Instructions

  1. In a large stockpot, heat olive oil over medium-high heat. Sauté diced onion, carrots, and celery for 5–7 minutes until softened.
  2. Add minced garlic and crushed red pepper flakes; cook for another 2 minutes until fragrant.
  3. Pour in chicken or vegetable stock and fire-roasted diced tomatoes. Stir in Italian seasoning and bring to a gentle simmer.
  4. Add uncooked orzo and cover the pot; simmer for 10–12 minutes until al dente, stirring occasionally.
  5. Stir in fresh spinach or kale until wilted, then adjust seasoning with salt and pepper.
