  • 2 ½ sticks unsalted butter (room temperature)
  • 1 ¼ cups superfine sugar
  • 6 eggs (beaten)
  • 2 cups self-rising flour (sifted)
  • 2 Tbsp Irish whiskey
  • For Buttercream: 1 ¼ sticks unsalted butter, 4 ½ cups powdered sugar, 1 Tbsp whiskey, 1 Tbsp milk
  • For Glaze: ¼ stick butter, ½ cup heavy whipping cream, ¼ cup sugar, 2 Tbsp brown sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round baking pan.
  2. Beat room temperature butter and sugar until fluffy. Gradually add beaten eggs.
  3. Sift in flour and salt; fold until just combined. Stir in whiskey.
  4. Pour batter into the pan and bake for about 35 minutes or until a toothpick comes out clean. Cool on a rack.
  5. For buttercream, beat softened butter with salt, then gradually add powdered sugar, whiskey, and milk until smooth.
  6. For the glaze, melt butter with cream, sugars, and whiskey over medium heat until combined.
  7. Assemble layers with buttercream between them, then pour glaze over the top.
