  • 34 lb chuck roast
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Season the chuck roast generously with salt and pepper.
  2. In a hot skillet, heat olive oil and sear the roast for about 2–3 minutes on each side until browned.
  3. Place sliced onion, carrot chunks, and quartered potatoes in the slow cooker.
  4. Add minced garlic over the vegetables along with thyme, bay leaf, and Worcestershire sauce.
  5. Carefully position the seared roast on top of the vegetable mixture.
  6. Pour beef broth around the sides of the roast to avoid washing away seasonings.
  7. Cover and cook on low for about 8 hours or high for 4–5 hours until tender.
  8. Remove the bay leaf before serving. Let rest for about 10 minutes before slicing.
