  • 10 tablespoons unsalted butter (room temperature)
  • 1 large egg (room temperature)
  • For the filling: 1 stick unsalted butter (room temperature), 2 ½ teaspoons pure vanilla extract, 2 1/2 cups powdered sugar, and a pinch of salt.

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, cream the sugar and butter until light and fluffy. Mix in the egg until combined.
  4. Gradually add dry ingredients to wet ingredients until just mixed.
  5. Scoop tablespoon-sized portions onto a lined baking sheet and bake for about 10 minutes.
  6. Cool cookies before preparing the filling by beating together filling ingredients until smooth.
  7. Spread filling between two cooled cookies to create sandwich cookies.
