  • 1 pound lean ground turkey
  • 1 cup diced canned tomatoes
  • 1 medium zucchini
  • 1 cup black beans (optional)
  • 1 cup corn kernels (optional)
  • 1 cup cheddar cheese (grated)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes, poke with a fork, drizzle with oil, sprinkle with salt, and bake for about 45 minutes until tender.
