  • 4 oz pasta (chickpea, gluten-free, or whole wheat)
  • 4 cups vegetable broth
  • 1 cup canned chickpeas (drained and rinsed)
  • 2 cups chopped cucumbers
  • 2 cups halved cherry tomatoes
  • 1/2 cup chopped red onion
  • 2 tbsp fresh basil (chopped)
  • 1 tbsp fresh mint (chopped)
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1/2 lemon (juiced)
  • 2 tsp honey
  • 1 tsp dried oregano
  • 1.5 tsp kosher salt
  • 4 cloves garlic (minced)
  • fresh cracked pepper

Instructions

  1. In a small saucepan, bring 4 cups of vegetable broth to a boil. Cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, chop the cucumbers, cherry tomatoes, and red onion.
  3. Drain and rinse the chickpeas under cold water.
  4. In a bowl, whisk together olive oil, apple cider vinegar, lemon juice, honey, garlic, oregano, salt, and pepper for the vinaigrette.
  5. Combine cooked pasta with chickpeas and veggies in a large mixing bowl. Drizzle with vinaigrette and toss gently.
  6. Taste and adjust seasoning if needed.
