  • 4 large russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place each potato between two chopsticks or skewers to avoid cutting all the way through. Slice vertical slits about ⅛ inch apart down the length of each potato.
  3. Place the potatoes on a baking sheet and brush half of the melted butter over them, ensuring to get into the slits. Season with salt and pepper.
  4. Bake for 30 minutes before gently pulling apart the layers with a knife and brushing on the remaining melted butter.
  5. Return to the oven and bake for an additional 30-35 minutes until golden brown and tender.
