  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 4 cloves garlic (minced)
  • 1 pound lean ground beef
  • 3 tablespoons flour
  • 1 (6 ounce) can tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 2 Russet potatoes (peeled & diced)
  • 4 medium carrots (peeled & sliced)
  • 1 cup frozen peas (optional)
  • Salt & pepper (to taste)

Instructions

  1. In a soup pot over medium-high heat, add olive oil and sauté chopped onion and celery for about 5–7 minutes until softened.
  2. Stir in minced garlic and cook for another 30 seconds to release its aroma.
  3. Add lean ground beef, breaking it up as it cooks until browned (about 8 minutes).
  4. Sprinkle in flour, stirring frequently for about 2 minutes to thicken.
  5. Mix in tomato paste until well combined.
  6. Pour in beef broth, Worcestershire sauce, Italian seasoning, diced potatoes, and sliced carrots. Bring to a boil then reduce to a simmer for at least 30 minutes.
  7. Stir in frozen peas just before serving and season with salt and pepper to taste.
