  • 1 lb ground beef
  • 2 cups Yukon yellow potatoes (peeled and chopped)
  • 2 cans beef broth (14.5 oz each)
  • 1 can condensed tomato soup (10 oz)
  • 1 can petite diced tomatoes (15 oz)
  • 1 bag frozen mixed vegetables (16 oz)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil
  • 1 teaspoon salt

Instructions

  1. In a large pot over medium-high heat, brown the ground beef with diced onion and minced garlic until no longer pink; drain excess grease.
  2. Add chopped potatoes, beef broth, tomato soup, diced tomatoes (undrained), frozen vegetables, Worcestershire sauce, parsley, basil, and salt. Stir well.
  3. Bring to a boil, cover with a lid, then reduce heat to medium-low and simmer for at least 30 minutes.
  4. Before serving, taste and adjust seasonings as needed.
