  • 3 tablespoons extra virgin olive oil
  • 7 oz chicken sausage, chopped
  • 6 oz shrimp, chopped
  • 1/2 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 ribs celery, finely chopped
  • 3 green onions, sliced (white and green parts separated)
  • 2 eggs
  • 1 cup long grain white rice
  • 11/2 cups chicken broth

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sauté onion, bell pepper, celery, and white parts of green onions until softened (about 5 minutes).
  2. Add chicken sausage and shrimp; season with Creole seasoning. Cook until everything is heated through and slightly browned (5-7 minutes).
  3. Push ingredients to one side; add remaining olive oil and crack in eggs. Scramble until fully cooked.
  4. Stir in cooked rice and chicken broth; mix thoroughly to coat the rice.
  5. Season with garlic powder, turmeric, salt, and pepper to taste. Heat through for another 5 minutes.
