  • 3 cups cooked long-grain rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 medium onion (diced)
  • 2 carrots (peeled and diced)
  • 1 cup frozen peas
  • 2 cloves garlic (minced)
  • 2 large eggs (lightly beaten)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon white pepper
  • 2 green onions (sliced for garnish)

Instructions

  1. Prep all ingredients by chopping vegetables and measuring sauces.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add ground chicken and cook until no pink remains, about 5-7 minutes.
  3. Push chicken to one side and add remaining oil along with diced onions and carrots. Sauté for 2-3 minutes until softened.
  4. Push mixture aside again, pour in beaten eggs, and scramble until fully cooked (about 1-2 minutes).
  5. Add cooked rice, breaking up clumps as you stir-fry everything together for about 3-4 minutes.
  6. Stir in soy sauce, sesame oil, and peas; cook for an additional 2-3 minutes until heated through.
  7. Garnish with white pepper and sliced green onions before serving.
