  • 1 1/3 cups sugar (divided)
  • 3 eggs
  • 2 teaspoons grapefruit zest
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup freshly squeezed grapefruit juice
  • 1/2 cup powdered sugar
  • 12 tablespoons freshly squeezed grapefruit juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. In another bowl, whisk Greek yogurt, 1 cup sugar, eggs, grapefruit zest, and vanilla until smooth.
  4. Gradually mix dry ingredients into wet until just combined.
  5. Fold in vegetable oil gently.
  6. Pour batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  7. Meanwhile, heat remaining grapefruit juice with the remaining sugar until dissolved.
  8. Once baked, cool the cake slightly before soaking it with grapefruit syrup.
  9. For the glaze, mix powdered sugar with grapefruit juice and drizzle over cooled cake.
