  • ¼ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (room temperature, cut into 8 pieces)
  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • 1 tablespoon grapefruit zest
  • 1 cup grapefruit juice (or a combination of grapefruit + lemon juice)
  • Pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend 1 cup of all-purpose flour, ¼ cup powdered sugar, ¼ tsp salt, and ½ cup room temperature butter until crumbly. Press firmly into the bottom of a baking dish and bake for 18-20 minutes until golden.
  3. For the filling, whisk together 1½ cups granulated sugar and ¼ cup all-purpose flour in a bowl. Add 4 eggs one at a time, whisking well after each addition. Mix in 1 tablespoon grapefruit zest and 1 cup grapefruit juice until smooth.
  4. Pour the filling over the hot crust and bake for an additional 20 minutes until set.
  5. Allow to cool completely before refrigerating for at least 1-2 hours before serving.
