  • 2 1/4 cups All purpose flour (spooned and leveled)
  • 2 tsp Baking soda
  • 1/4 tsp Salt
  • 2 tsp Ground ginger
  • 1 tsp Cinnamon
  • 1/4 tsp Ground clove
  • 1 tbsp Espresso powder
  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses
  • White granulated sugar (for rolling)
  • 1 1/2 cups Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Espresso or strong coffee (adjust as needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, ground clove, and espresso powder.
  3. In another bowl, cream softened butter with brown and granulated sugars until fluffy.
  4. Mix in the egg, vanilla extract, and molasses until combined.
  5. Gradually add dry ingredients to wet ingredients; stir gently until just combined.
  6. Scoop out dough and roll into balls; coat in granulated sugar before placing on lined baking sheets.
  7. Bake for 13 minutes until golden around edges but still soft in centers; cool on wire racks.
  8. For the glaze, mix powdered sugar with espresso or strong coffee; drizzle over cooled cookies.
