  • 1 teaspoon baking powder
  • ¼ teaspoon + 1/8 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 ½ teaspoons ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup canola oil
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon apple cider vinegar
  • ¼ cup molasses
  • 1 cup water

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt.
  3. In another bowl, combine the wet ingredients: canola oil, vanilla extract, apple cider vinegar, molasses, and water until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not over-mix.
  5. Transfer the batter into the prepared pan and bake for approximately 35 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
