  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil
  • Salt & pepper

Instructions

  1. Roast the garlic by wrapping it in foil with olive oil and baking at 180°C (356°F) for 50-60 minutes.
  2. Peel and dice the baking potatoes, boil in salted water until fork-tender (15-20 minutes), then drain.
  3. Mash the potatoes with melted butter, cream, roasted garlic, Parmesan, salt, and pepper until smooth.
  4. Pipe the mixture into mounds on a baking tray lined with parchment paper.
  5. Drizzle melted butter over each mound and bake at 200°C (400°F) for about 15-20 minutes or until golden brown.
