  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by pressing Pâte Sucrée dough into tartlet pans. Freeze for 15-30 minutes before baking at 375°F until golden brown.
  2. Make the strawberry jam by cooking chopped strawberries with granulated sugar until thickened. Allow it to cool.
  3. For the pastry cream, heat sweetened condensed milk, whole milk, and heavy cream until simmering. Whisk egg yolks and cornstarch separately, then temper and combine for a smooth cream.
  4. Chill the pastry cream for about two hours.
  5. Assemble the tartlets by spreading strawberry jam in each shell, piping in pastry cream, and topping with fresh strawberry halves.
