  • 3 large yellow onions, sliced

  • 2 tsp fresh thyme leaves
  • 1 tbsp balsamic vinegar
  • 1 cup shredded Gruyère cheese

  1. Sear the beef short ribs in a large pot over medium-high heat until browned on all sides (about 5-7 minutes). Remove and set aside.
  2. In the same pot, add sliced onions and cook over medium heat until caramelized (20-25 minutes), stirring occasionally.
  3. Return short ribs to the pot, pour in the beef broth, add thyme leaves and balsamic vinegar. Bring to a boil, then reduce heat and simmer for about an hour.
  4. Remove short ribs, shred the meat using forks, discard bones, and return meat to broth.
  5. Serve hot in bowls topped with shredded Gruyère cheese, broiling for 5 minutes until bubbly.
