  • 24 ounces Persian cucumbers
  • 1 pint cherry tomatoes
  • 1 cup sweet corn
  • 1 orange bell pepper
  • 1/3 cup diced red onions
  • 1/4 cup crumbled Cotija cheese (or feta)
  • 2 tablespoons minced cilantro
  • 2 tablespoons minced mint
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice
  • Zest of one lime
  • 1 tablespoon apple vinegar
  • 12 tablespoons honey
  • 1/2 teaspoon garlic powder
  • 1/4 tsp EACH dried oregano, chipotle pepper, pepper, salt

Instructions

  1. In a large bowl, combine all salad ingredients: cucumbers, tomatoes, corn, bell pepper, onions, cheese, cilantro, and mint. Toss gently.
  2. In another bowl, whisk together dressing ingredients: olive oil, lime juice, lime zest, apple vinegar, honey, garlic powder, oregano, chipotle pepper, salt, and pepper.
  3. Drizzle dressing over salad and toss gently to coat.
  4. Cover and chill in the refrigerator for at least 1 hour before serving to enhance flavors.
