  • 4 potatoes
  • 500 g (1 lb) chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dried oregano
  • 1 onion (finely chopped)
  • 3 garlic cloves (crushed)
  • 1 cup chicken stock
  • 1 cup cream
  • 3 tsp Dijon mustard
  • 12 tsp lemon juice

Instructions

  1. Preheat your oven to 200°C/390°F.
  2. Peel and cube the potatoes, then toss them with olive oil, salt, and pepper on a baking sheet. Roast for about 30 minutes until golden brown.
  3. Flatten the chicken breasts between parchment paper for even cooking, then season with salt, pepper, and oregano.
  4. Sear the chicken in a pan over medium-high heat for about 2-3 minutes on each side until golden brown.
  5. In the same pan, sauté onions and garlic until fragrant. Add chicken stock and simmer for a few minutes before stirring in cream and Dijon mustard; cook until slightly thickened.
  6. Return the seared chicken to the pan to absorb flavors for an additional 5 minutes.
  7. Serve hot with the roasted potatoes.
