  • 1 lb chicken tenders
  • 1 head broccoli
  • 2 bell peppers (any color)
  • 1 yellow onion
  • 1/4 cup + 2 tbsp soy sauce
  • 3 tbsp olive oil
  • 2 1/2 tbsp honey
  • 1 1/2 tsp garlic powder
  • 1/2 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. Chop the broccoli into bite-sized pieces and slice the bell peppers and onion.
  2. Cut chicken tenders into strips and season with salt and pepper.
  3. Heat 1 tablespoon of olive oil in a pan over medium heat; cook chicken until browned and cooked through, then remove from pan.
  4. In the same pan, add remaining olive oil along with chopped veggies, garlic powder, ginger, salt, and pepper; sauté until tender yet crisp.
  5. Lower heat and mix in soy sauce and honey; simmer briefly.
  6. Return chicken to the pan; combine well and let simmer another five minutes.
  7. Serve over rice for a satisfying meal.
