  • 2 ½ pounds stew beef, cut into 1 ½ inch chunks
  • 3 ½4 tablespoons olive oil
  • 2 medium yellow onions, quartered and sliced
  • 5 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 1 tablespoon tomato paste
  • 3 cups beef broth (or vegetable broth)
  • 1 (14.5 ounce) can diced tomatoes
  • 4 medium carrots, cut into 1-inch chunks
  • 1 pound Yukon gold potatoes, cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a Dutch oven over medium-high heat, brown the seasoned beef in olive oil until golden on all sides; set aside.
  3. Sauté onions in the same pot until golden, then add minced garlic and cook until fragrant.
  4. Sprinkle flour over the onion mixture to create a roux, stirring constantly for about a minute.
  5. Add tomato paste and gradually pour in beef broth while stirring to avoid lumps.
  6. Return the seared beef to the pot with diced tomatoes; add thyme and oregano.
  7. Bring to a gentle simmer, cover, and transfer to the oven for one hour.
  8. Stir in cubed potatoes and carrot chunks; cover and bake for another hour.
  9. Remove bay leaves before serving; enjoy hot!
