  • 5 pounds apples (about 11 large apples)
  • 1/4 teaspoon lemon zest
  • Juice from half a lemon (about 2 tablespoons)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1 teaspoon vanilla
  • 1 & 1/2 cups all-purpose flour (for crumble topping)
  • 1/3 cup granulated sugar (for crumble topping)
  • 3/4 cup brown sugar (packed, for crumble topping)
  • 1/2 teaspoon kosher salt (for crumble topping)
  • 3/4 cup butter (melted; 1 and 1/2 sticks)

Instructions

  1. Preheat oven to 425°F (220°C). Place a baking sheet inside.
  2. Prepare the apple filling by combining lemon zest and juice in a skillet. Peel and slice apples, then add to the skillet with sugars, flour, salt, and spices. Cook over medium heat for about 20 minutes until tender.
  3. Roll out pie crust into a dish; chill for 30 minutes.
  4. Make crumble topping by mixing flour, sugars, and salt; pour melted butter over dry ingredients and mix until crumbly.
  5. Spread apple filling into cooled crust, top with crumble mixture.
  6. Bake for 15 minutes at high temperature, then reduce heat to 350°F (175°C) and bake for an additional 30 minutes until golden brown.
