  • 1/4 cup extra virgin olive oil
  • 1/2 medium red onion, sliced
  • 1 large carrot, sliced
  • 2 cups broccoli florets
  • 1 medium red bell pepper, sliced
  • 1 medium yellow squash, sliced
  • 1 medium zucchini, sliced
  • 34 garlic cloves, minced
  • 1 heaping cup grape tomatoes, halved
  • 2 teaspoons dried Italian herbs
  • 2 tablespoons fresh lemon juice
  • 1/2 cup grated parmesan cheese (divided)
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve half a cup of pasta water before draining.
  2. In a skillet over medium heat, heat the olive oil and sauté the onion until translucent. Add carrots, broccoli, bell pepper, yellow squash, zucchini, and garlic; cook until tender-crisp.
  3. Combine the drained pasta with the sautéed vegetables in the skillet. Gradually add reserved pasta water while tossing everything together.
  4. Stir in Italian herbs, lemon juice, and half of the parmesan cheese. Mix well.
  5. Serve hot, garnished with remaining parmesan cheese and fresh parsley.
