  • 3 ½ cups bread flour
  • 2 ¼ tsp active dry yeast
  • 1 ¼ cups warm water (105°F–110°F)
  • 1 tbsp sugar
  • 1 ½ tsp salt
  • 2 tbsp olive oil (plus more for brushing)
  • 1 tbsp Italian herb blend (dried oregano, basil, thyme, parsley)
  • 3 cloves garlic, minced
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese

Instructions

  1. Activate the yeast by mixing warm water, sugar, and yeast in a bowl. Let it sit until foamy (5-7 minutes).
  2. Stir in olive oil, salt, and half of the flour until combined. Gradually add the remaining flour until a soft dough forms.
  3. Knead on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl; cover and let rise in a warm place until doubled in size (1-1½ hours).
  5. Punch down the risen dough and shape into a rectangle. Sprinkle with garlic and cheeses.
  6. Roll up tightly from one end to the other; place seam-side down in a greased loaf pan.
  7. Cover again; let rise for another 30-40 minutes while preheating the oven to 375°F (190°C).
  8. Brush with olive oil; sprinkle with herbs/extra cheese before baking.
  9. Bake for about 25-30 minutes until golden brown and hollow-sounding when tapped.
  10. Let cool slightly before slicing and serve warm.
