  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour (or gluten-free substitute)
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt (plus more to taste)
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (or more cheddar)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F. Grease a baking dish.
  2. Layer the thinly sliced potatoes and onion in three tight rows.
  3. In a saucepan over medium heat, melt butter and whisk in flour gradually. Add almond milk while whisking until smooth.
  4. Stir in shredded cheddar, garlic powder, salt, and pepper until melted.
  5. Pour the sauce over the layered potatoes.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, add Gruyere and Parmesan on top, and bake uncovered for an additional 30-45 minutes until golden.
