  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Make the Dressing: In a bowl, mix mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Set aside.
  2. Cook the Shrimp: Boil water in a pot. Add shrimp and cook for 2 to 3 minutes until pink.
  3. Prepare Ice Bath: As shrimp cook, prepare an ice water bath. Transfer cooked shrimp using a skimmer and cool for about 3 minutes before draining.
  4. Combine Ingredients: Chop shrimp into bite-sized pieces and mix with cucumbers, green onions, and dressing until well combined.
