  • 1 large yellow onion, finely diced
  • 2 pounds boneless skinless chicken thighs
  • 1 tablespoon ginger paste
  • 1 tablespoon minced garlic
  • 1 can (14.5 ounces) diced tomatoes
  • 8 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 11/4 teaspoons smoked paprika
  • 11/4 teaspoons ground cumin
  • 11/4 teaspoons ground turmeric
  • 11/4 teaspoons salt
  • 21/4 teaspoons garam masala
  • 1/8 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the Sauce: In a pan over medium-high heat, warm the oil and sauté onion, garlic, and ginger until golden brown. Stir in spices and diced tomatoes. Transfer to a slow cooker.
  2. Add Chicken: Place chicken thighs into the slow cooker and stir to coat with sauce. Cook on high for 2-1/2 to 4 hours or low for 4 to 6 hours until cooked through.
  3. Blend Sauce: Remove chicken and chop into bite-sized pieces. Blend the sauce until smooth using an immersion blender.
  4. Finish with Cream: Return blended sauce to slow cooker, stir in butter and cream until combined.
  5. Combine & Serve: Add chopped chicken back into sauce. Taste and adjust seasoning if necessary before serving hot with rice or naan.
