  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped

  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a round baking dish.
  2. In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in the baking dish; drizzle half of the balsamic mixture over them.
  4. Top with the remaining potato slices and pour the rest of the balsamic mixture on top.
  5. Cover the dish with foil and bake for about 45 minutes.
  6. Remove the foil; if desired, sprinkle grated Parmesan cheese on top and bake uncovered for an additional 15-20 minutes until golden brown.
  7. Let cool for a few minutes before slicing into wedges.
