  • 6 egg yolks
  • 1 cup + 2 tbsp granulated sugar (divided)
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 cup unsalted butter (softened)
  • 1 egg
  • 1/2 cup granulated sugar (for rolling the dough in)
  • 1/2 cup granulated sugar (for the brulee topping)

Instructions

  1. Prepare the pastry cream by heating milk in a saucepan until steaming. Whisk together egg yolks, sugar, salt, vanilla bean paste, and cornstarch until smooth. Gradually add hot milk to temper the mixture, then return to the saucepan and cook until thickened. Stir in butter and cool completely.
  2. In a bowl, beat softened butter and sugar until fluffy. Add an egg and vanilla; mix well. Combine flour, baking powder, and salt in another bowl before gradually adding to the wet mixture.
  3. Preheat oven to 350°F (175°C). Scoop dough onto a baking sheet lined with parchment paper; flatten slightly and place pastry cream in the center before folding edges over.
  4. Roll cookie balls in sugar before baking for about 9 minutes or until golden around the edges.
