Ingredients

Scale
  • 810 medium flour tortillas
  • 3 cups cooked shredded chicken
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green chiles
  • 1 cup sour cream
  • 2 cups chicken broth
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour

Instructions

  1. Prepare the white sauce by melting butter in a saucepan, whisking in flour until golden, then gradually adding chicken broth. Cook until thickened, then stir in sour cream, cumin, salt, and pepper.
  2. Mix filling ingredients: Combine shredded chicken, onion, green chiles, cilantro, and one cup of cheese in a bowl.
  3. Assemble the enchiladas: Preheat oven to 350°F. Spread some sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down.
  4. Pour remaining sauce over enchiladas and sprinkle leftover cheese on top.
  5. Bake uncovered for 25-30 minutes until bubbly and golden. Let rest before serving.
