  • 8 ounces uncooked fettuccine or linguine
  • 1 tablespoon butter
  • 1/2 tablespoon olive oil
  • 8 ounces cremini mushrooms (sliced thin)
  • 2 cloves garlic (minced)
  • 1/3 cup dry white grape juice
  • 1/4 teaspoon Italian seasoning
  • 1 teaspoon lemon juice
  • 1 teaspoon flour
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy cream
  • Salt & pepper (to taste)
  • Fresh parsley (chopped, to taste)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, according to package directions.
  2. In a skillet over medium-high heat, combine butter and olive oil. Sauté sliced mushrooms and minced garlic until golden brown, about 5 minutes. Remove from pan.
  3. In the same skillet, add grape juice, Italian seasoning, lemon juice, flour, and Dijon mustard. Stir to form a smooth paste.
  4. Gradually pour in heavy cream while stirring. Allow the sauce to simmer for a few minutes until thickened.
  5. Return sautéed mushrooms to the skillet and cook for an additional few minutes.
  6. Drain pasta and toss with the creamy mushroom sauce. Mix in fresh parsley before serving.
